Louianna Organic Balsamic Vinegar is from the Modena region in Italy, farmed and produced by the Bellei family. Since the end of the 17th century, the Bellei's managed and cultivated the agricultural lands owned by the local nobility. Since the end of the nineteenth century, the Bellei family has produced Balsamic Vinegar strictly for their personal use. Over the last 15 years their production has increased to meet the market demands and those of their loyal consumers.
The balsamic vinegar is the result of the slow acidification of cooked grape must and wine vinegar alongside a four year maturation process in oak wooden casks. Aged balsamic vinegar is thicker, sweeter and more aromatic due to a longer reducing and ageing period. It is left to season in the antique oak casks where it embodies its unique fragrances and flavours.
